THE SWIZZLE

Drinks need not be complicated, and with a little imagination and some research you can use classic drink families to inspire wonderful modern day drinks. The Swizzle, is bar far one of my favourite Rum drinks to explore. It has so many possibilities. It is also the signature serve that El Dorado (one of the ACR brands) uses to promote their Rum. This drink was made by a Shaker Advanced Bartender Course student called Salvatore Lemmolo.
He created it during his week long course with me in November 2013.
It was called the No name Swizzle
No Name Swizzle
60ml El Dorado 5
20ml lime juice
20ml Homemade Pineapple and Ginger syrup
10ml Orgeat
2 dashes Bitters
Method
Pour all ingredients in a 16oz Mini shaker, add crushed ice, Swizzle with El Dorado Swizzle Stick, crown with lots of ice.
Garnish
Orange zest and Mint sprig, sprinkle of castor sugar over mint leaves
To make syrup
300g chopped fresh pineapple
200ml water
200ml Eager Pineapple juice
300g Demerara sugar
200g castor sugar
50g muddle root ginger
Add all ingredients to a pan and simmer for 30min. strain well through sieve ensuring to push through all the flavour. Store in a clean sterilised bottle.
