The Island Hopper

INGREDIENTS

2 oz.’s of Hop-infused Mount Gay Black Barrel
.5 oz.’s of honey syrup (2:1)
2 dashes of orange bitters
Cedar plank smoke and orange zest.

METHOD

In a mixing glass add 2 oz.’s of hop-infused mount gay black barrel, .5 oz.’s of honey syrup and 2 dashes of orange bitters. Fill the mixing glass with ice and stir to chill and achieve dilution. Torch a culinary grade cedar plank and extinguish the flame by cupping it with an upside down rocks glass. Once the flame is extinguished the glass will fill with cedar smoke. Flip the glass and fill it half way with ice. Strain the cocktail into the rocks glass taking care to not splash. Finish with an orange zest and serve.
