- 1.5oz Don Barcelo Imperial
- .75oz Pedro Ximenez
- .5oz lime juice
- 3oz Spanish cider from Asturias or the Basque Country
- sugarcane straw

- First, prepare a Collins glass with ice layered with apple and lime and place a cane straw.
- Next, in a mixing tin, combine rum, sweet sherry, and lime with ice and shake well.
- Open shaker and add cider to tin.
- Strain all contents into the prepared glass and serve.
