INGREDIENTS

  • 1.5oz Don Barcelo Imperial
  • .75oz Pedro Ximenez
  • .5oz lime juice
  • 3oz Spanish cider from Asturias or the Basque Country
  • sugarcane straw
  • apple slices
  • lime wheel

METHOD

  1. First, prepare a Collins glass with ice layered with apple and lime and place a cane straw. 
  2. Next, in a mixing tin, combine rum, sweet sherry, and lime with ice and shake well. 
  3. Open shaker and add cider to tin. 
  4. Strain all contents into the prepared glass and serve.
